TORTILLA DE PATATAS (SPANISH OMELETTE)

5 large potatoes, diced into 1” cubes (Yukon Gold or Russet)
⅓ cup olive oil
8 large eggs
INSTRUCTIONS
Bring a skillet to medium heat, add olive oil, potatoes, and stew until softened
Strain potatoes into a bowl and save half the oil
Beat eggs with 2 Tbsp Sweet & Spicy Double Onion Marmalade, pour over potatoes, and season with salt and pepper
Add saved oil back to the skillet, add potato mix, gently shape the omelet with a spatula, and cook for 5 to 7 minutes
Place a flat plate over the skillet, invert - placing the omelet on the plate - and then ease back into the skillet to cook another side until golden
Remove from skillet, serve with a little extra Sweet & Spicy Double Onion Marmalade on the side ~ and Enjoy!
For a deliciously spicy, textured finish to your tortilla, dice our candied Jalapenos and add to the potato mix just before cooking
