Mango-Ginger Quick Bread

~ YIELDS: 8, COOK TIME: 1 Hour

Ingredients:

  • 1 c. Mango, Coconut, and Macadamia Nut Conserve

  • 2 c. flour

  • 1 tsp. baking soda

  • 1/2 tsp. ground cinnamon

  • 1/2 tsp. Salt

  • 1/4 tsp. ground allspice

  • 3 tbsp. crystallized ginger ~ 1/2 a cup

  • 3/4 c. light brown sugar

  • c. vegetable oil

  • 2 large eggs

  • 1 1/2 tsp. lime zest

  • 1 tbsp. fresh lime juice

Directions:

  1. 1. Preheat oven to 375 F. Grease and flour 9 x 5 x 3-inch loaf pan.

  2. 2. In a large bowl, stir together flour, baking soda, cinnamon, salt, and allspice.  Stir in ginger.

  3. 3. In another large bowl, with an electric mixer on medium speed, beat brown sugar and oil until combined.  Beat in eggs, 1 at a time, beating well after each addition, until light and creamy.  Beat in lime zest and juice.  Beat in Mango, Coconut, and Macadamia Nut Conserve.  Fold in dry ingredients until just combined.  Spoon batter into loaf pan and smooth top.

  4. 4. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, unfold bread, and cool completely on the wire rack.
