Berry Pop-Tarts

Ingredients:

-2 refrigerated pie crusts

-½ cup Spiced Blueberry Preserves

-½ cup Strawberry Margarita Syrup

-2 tbsp. cornstarch (divided)

-1 egg

-1 cup powdered sugar

-1-2 tbsp. whole milk (more if needed)

-¼ teaspoon vanilla extract

-fresh fruit to garnish (optional)

-sprinkles (optional)

-1 drop of food coloring (optional)

Instructions:

1. Preheat the oven to 350 degrees.  Roll out your pie crust slightly until it reaches about 8 x 9 inches.  You want three square pieces about 3 x 8 from each pie crust.

2. In a medium bowl, add your Spiced Blueberry Preserves and a tbsp of cornstarch.  Mix together.  Repeat the same thing in another bowl with the Strawberry Margarita Syrup.

3. Add about one and a half tablespoons of jam to the middle of the pie crust square. Brush egg wash around the edges of this to help glue the pastry shut.  Carefully place the other side of the pastry on top of the side with jam.

4. Using a fork, crimp the edges shut.  Poke 3-4 holes in the middle of the pastry to allow air to escape.  Use the rest of the egg wash to brush over the entirety of each pop tart.

5. Bake at 350 degrees for about 20 minutes.  At the 15 minute mark, check the pop-tarts to see if the edges are browning.  If they are getting a little dark, place a sheet of foil over the pop-tarts for the remaining 5-minutes to keep the edges from burning.  Remove the pop-tarts from the oven and allow to cool for 5-minutes on the sheet pan before transferring to a cooling rack and then let cool completely on a cooling rack.

6. While the pastries are cooling, make the glaze by whisking together about 1 cup of powdered sugar, 1-2 tbsp of milk, and ¼ tea of vanilla extract.  Mix together until it forms a spreadable consistency and there are no lumps.  If it’s too thick, add a ½ teaspoon more of milk as needed.  If it’s too thin, add an additional 1 tablespoon of confectioner’s sugar as needed.  You can add 1 drop of food coloring to tint the frosting’s color.  

7. When your pop tarts have fully cooled, drizzle them with 1-2 teaspoons of the icing and top with sprinkles if desired.  If desired, add blueberries or strawberries on top.

8. Serve immediately or keep in a cool, dry place for up to 3 days.  Serve warm or at room temperature! Enjoy!
